Hart’s Mill stands on a bend in the Port River, defined by a group of historic buildings that includes a five-storey stone mill from eighteen fifty-five and a taller six-storey brick mill completed in eighteen eighty-eight. It was founded by John Hart, a former sea captain and future South Australian premier, to capitalize on the region’s growing wheat trade. By utilizing advanced steam-powered machinery and silk-mesh sifters, the venture produced "Hart’s Flour," which earned a reputation for quality across the British Empire and commanded the highest prices in Australia for years.
