Pequod's Pizza on North Clybourn Avenue is recognized by the distinctively dark, caramelized halo of cheese that edges its pan-style crust. This signature feature was developed by the restaurant’s founder, Burt Katz, who opened the original location in suburban Morton Grove in nineteen seventy-one. Katz named the pizzeria after the doomed whaling ship from Herman Melville’s novel, Moby Dick.
