Tortillería Y Molino Salmo 23 is a traditional corn mill and tortilla shop located on Calle Júpiter in the center of Tulum. Operated under the ownership of Mariano Monfil Arcos, the establishment serves the daily needs of the local community by processing nixtamal—corn that has been soaked and cooked in an alkaline solution—to create fresh masa for tortillas.
