Aritsugu is a knife house in the heart of Nishiki Market that traces its origin to fifteen sixty, when the swordsmith Fujiwara Aritsugu began forging blades for the Imperial Court. While the name has been known in Kyoto for over four hundred and sixty years, the current shop in this market only opened in nineteen eighty-one. Before then, the business did not operate as a retail storefront. Instead, its craftsmen traveled directly to professional kitchens to forge and maintain tools for the cooks who used them.
