Şehzade Cağ Kebap sits within a pedestrianized alleyway in the Hocapaşa neighborhood, a space defined by the scent of wood-burning fires and the sight of meat roasting on a horizontal spit. While the familiar döner kebab rotates vertically elsewhere in the city, the cağ kebab here relies on a different technique. The entire lamb, excluding the neck and shank, is prepared and threaded onto a spit that turns horizontally over an open flame.
