Tortillería Altavista

Tortillería Altavista is a local production house for corn tortillas located on Calle Jacarandas in the Emiliano Zapata neighborhood. The space functions as an industrial kitchen, dominated by the heat and movement of a specialized production line. Raw white corn arrives to be nixtamalized, a traditional process involving boiling the kernels with lime to soften the outer skin for grinding. Once the corn is ground into masa, the dough is fed into a machine that presses and moves the tortillas along a conveyor belt.
