Gian di Lassi is a modest, bustling corner shop on Gagar Mal Road, easily identified by the stacks of curd trays and the steady stream of people waiting for a steel glass of hand-churned yogurt drink. Operating in Amritsar since nineteen twenty-one, the establishment has built its reputation on a consistent, century-old method of preparing lassi. Rather than using machines, the curd is hand-churned, often in brass vessels, and finished with a thick layer of malai—fresh cream—and occasionally crumbled mawa peda, a local milk-based sweet.
