Miyakoshiya Coffee is defined by its use of the flannel drip method, a traditional Japanese technique that uses fabric filters rather than paper to produce a notably stronger cup. Since its founding in nineteen eighty-seven, the business has grown from a single location into a network of over twenty shops, primarily across Sapporo. The flagship branch, known as the Hall Stairs Cafe, sits on what locals often call Shower Street, a passage tucked behind the local Parco department store.
