The name itself signals the dual nature of the space, as it was designed to house both a high-end restaurant and an intimate theater stage. Jean-Marie Gurné opened the establishment in twenty sixteen, naming it after the imaginary Abbey of Thélème from the writings of François Rabelais. In that literary utopia, the only rule was to live according to one's own desires, a philosophy Gurné intended to mirror by creating a sanctuary for those who value gastronomy and the arts.
