The Chouara Tannery is a sprawling, open-air grid of hundreds of round stone vessels, each filled with either bright colored dyes or pungent white liquids. Located in the Fes el Bali district along the Oued Fes river, this site is the largest and oldest of the city's three remaining tanneries. Its layout has supported a continuous leather industry since at least the eleventh century, relying on natural materials like pigeon feces, cow urine, quicklime, and salt to clean and soften animal hides.
