Shambles Brewery is housed in an industrial warehouse on Elizabeth Street that, for nearly fifty years, operated as Mundy and Sons Butchery. Its identity as a brewery grew from the sight of the building’s interior when the founders first took possession of it. The space was packed with decades of old butchery equipment, machinery, and miscellaneous tools, leading the founders to remark that the site was a complete shambles.
