The Republic Bar and Cafe, located at two hundred ninety-nine Elizabeth Street, occupies a distinctive red brick building that has served as a local watering hole since eighteen thirty-one. Originally known as the Rose Hotel House and later the Rose and Crown, the structure underwent a significant transformation in the nineteen thirties when it was rebuilt in an art deco style and renamed the Empire Hotel.
