Noma occupies a cluster of buildings on Refshalevej, an industrial area known for its raw, harbor-side atmosphere. The site is recognized by its garden village layout, where greenhouses and outdoor spaces are integrated into the architecture. Founded in two thousand three by René Redzepi and Claus Meyer, the restaurant became a focal point for the New Nordic movement, which challenged traditional fine dining by centering menus on local, seasonal, and foraged ingredients like moss, lichen, and wild forest plants.
