Pou Chong Brothers is a food manufacturing business known for its role in shaping Indian-Chinese cuisine in Kolkata. Founded in nineteen fifty-eight by Lee Shih Chuan, the company began in a small sauce factory in the Tangra area. Lee, a third-generation Chinese-Indian whose ancestors came from a Hakka village in Guangdong, combined traditional Chinese techniques with local Indian ingredients. He famously invented a green chili sauce, inspired by the local habit of eating raw green chilies with rice, which eventually became a staple condiment across the country.
