El Huevo Frito is a long-standing bar in the Indautxu neighborhood, easily identified by the caricatures of famous Basque cultural and sports figures that line its walls. While the establishment has existed since the nineteen seventies, it pivoted its culinary focus in nineteen ninety-seven to specialize in pintxos, the traditional Basque small plates. True to its name, which translates to "The Fried Egg," the menu prominently features egg-based creations, including pintxos topped with quail eggs.
